Juan Carlos Flores Mazon Joins Resort As New Wine Director

Adding to this vibrant culinary offerings is the appointment of Juan Carlos Flores Mazon, the resort’s new Wine Director who will oversee the wine selections at all property establishments including Don Manuel’s coveted wine cellar.

In addition to his new responsibilities, Flores was an entrant in “The Best Sommelier in the World Competition” in London – this was his second time competing in this prestigious event. In 2004, Flores was named “Champion Sommelier” in Mexico and that very same year was selected as the Mexican representative at “The Best Sommelier in the World Competition.”The competition is organized by the Worldwide Sommelier Association, the largest Association of Sommeliers with over 100,000 members and co-hosts are the UK Sommelier Association.

Prior to joining Capella Pedregal, Flores was a wine consultant with the Boutique Hotel Casa Natalia in Cabo San Lucas and the Hotel Demetria in Guadalajara. Despite his busy schedule, he also found time to lecture the wine program for aspiring sommeliers at the ECI University in Guadalajara.

Flores began his career with the Salle Empire, Le Grill, Côté Jardin at the Hotel de París, Monte Carlo, Monaco. After that he joined the European Congress in Nice where he served as sommelier for 15 presidents of the European Economic Community.

He went on to join the Crillon Hotel in Paris as their sommelier in 2001 before leaving for Boulevard, a wine and liquor distributor in Cabo. During his time at Boulevard, Flores also served as their wine instructor and sales advisor.

A multi-talented individual, Flores holds a bachelor’s degree in hotel management from CESSA University, Mexico City; and Turquois Foundation & Lycée Technique de Monte Carlo, French Diploma, Marketing, Administration and Restaurant Service, Monaco. He has also been decorated by The American Academy of Hospitality Sciences with their Five Star Diamond Award. He is fluent in English, French and Spanish.
