Cassia, Capella Singapore’s Cantonese fine dining restaurant draws inspiration from the age-old spice routes in Southern and Western China as well as the seas around Singapore.
Classic dishes, including Peking Duck and Double-boiled Soups are prepared with full respect towards tradition, where the freshest local Chinese ingredients are used to create an epicurean feast for the senses. Recipes are based upon traditional and regional favourites then finished with haute Cantonese culinary techniques.
Acclaimed interior designer Andre Fu transformed this fine dining restaurant in Singapore to juxtapose the Colonial heritage building it resides in. Using a unique blend of warm and cool tones and plush fabrics, he has created a modern, sophisticated space where guests can enjoy an authentic fine dining experience that can be enjoyed in an intimately beautiful space.

DINNER EXPERIENCE AT CASSIA
Cassia restaurant presents a feast fit for royalty with an epicurean range of dinner set menus.
Under the culinary stewardship of Executive Chinese Chef Lee Hui Ngai, guests can enjoy a unique mouth-watering five-course duck set menu featuring that has been intricately designed to showcase its rich flavour, thin crispy skin and succulent meat.
Guests can enjoy four iterations of the duck, beginning with a Combination platter of Peking duck, Marinated duck with plum sauce and Green mango duck as an appetizer. Proceeding this, the second course if a Duck meat, celery and wanton soup followed by Pan-fried American duck breast with mashed potato. The meal will crescendo with the option of either Braised Ee-Fu noodles with conpoy and sliced duck or Fried rice with diced duck meat and olive vegetables. In closing, diners will cleanse their palate with a refreshing Chilled fresh mango cream, sago and pomelo dessert.
The Duck Experience Set Menu is $79++ per person for a five-course menu.
This Flavours of Cassia Set menu features luxurious dishes prepared in a creative assortment of cooking techniques and styles. Look forward to the Braised Bird’s Nest with crabmeat, Pan-fried American duck breast with black pepper sauce, Steamed Chilean sea bass with crispy fermented beans and vegetables, Poached Min Xin with live prawns in thick chicken broth and a Triology dessert platter.

Staying true to the ancient Chinese “dim sum” tea house traditions, Cassia introduces an oriental Dim Sum Afternoon Tea with signature favourites such as Steamed barbecued US kurobuta pork bun with black truffle, Steamed siew mai topped with abalone, and Chilled homemade coconut jelly, just to name a few.
If the traditional Western afternoon tea set is what you are looking for, enjoy a quintessentially British Colonial Afternoon Tea featuring artisanal Gryphon teas selections paired with handcrafted sweet and savory delights that include a Lemon tart meringue, Opera cake, Green tea pound cake, Passionfruit macaroon and Salmon burrito with olive oil caviar among others.
