The Knolls brings to Singapore a bona fide Barcelona Experience
Singapore 13 February 2012 – The Knolls at Capella Singapore is delighted to bring to local epicures a truly authentic Spanish experience, “Barcelona at its Best” held on 29 February 2012.
Capella’s very own Barcelona native, Chef Cristia Nou Picart will be joined by three of his equally talented young contemporaries from the food and culture capital of Europe, Barcelona, for one night only.
The rising culinary stars, Chef Aitor Olabegoya, Executive Chef of Migas Beijing and Dada Singapore, Chef Quim Marquez from the El Quim de la Boqueria, Barcelona and Chef Miquel Pascual from Sweet Reality, Barcelona will be bringing to Singapore connoisseurs an interpretive experimentation of Spanish cooking techniques and cuisine.
This dinner will see the Spanish Chefs deconstruct and breakdown pre-conceived Spanish traditional cooking, to create a molecular fiesta.
Chef Aitor Olabegoya, a Barcelona native, was previously Chef at Arola’s Ritz-Carlton Hotel Arts in Barcelona and also at the NH Palacio de la Merced in Burgos.
He previously trained with culinary masters such as Carme Ruscalleda (Sant Pau), Ferran Adria (El Bulli), May Hofmann (Hofmann), Toni Botella and other star Michelin chefs.
Chef Quim Marquez, owner of his own restaurant El Quim de la Boqueria, is the watering-hole for many of Barcelona’s top chefs. Located in the middle of the Boqueria market, Quim’s bustling 22-year old restaurant serves as a top tapas bar for Barcelona’s most highly discerning local palettes and gourmet food shoppers.
Notable menu teasers include refreshingly succulent “oysters swimming in gin & tonic” and a rich savoury “fois gras macaron” created by Chef Aitor.
For those after more traditional Spanish fare will enjoy Ajoblanco Langoustine Tartar with Apple Crystal Moscatel and Green Shiso. A chilled almond and garlic soup served with Langoustine and marinated with Apple Crystal Moscatel and Green Shiso.
Guests will find comfort in familiar favourites such as traditional Spanish fried eggs “Huevos Fritos Capella”, Chef Quim’s signature dish. Not your typical fried eggs and made with a special twist for Capella diners that will only be revealed on the night itself, “Huevos Fritos Capella” are perfectly sizzled in olive oil and served with chipirones (baby calamari). Every ambrosial morsel reaffirms the adage that sometimes simple pleasures are the most memorable.
Bringing the evening to a climax is the buttery soft “Oxtail Barcelona” that slides off the bone with ease and accentuates the rich flavour of the oxtail.
To end the evening, Chef Miquel Pascual has created a delightful range of sweet treats, “Verrines Collection 2012” paired with refreshing orange sangria.
Sensational Spanish wines have also been specially chosen for this event. These include:
- Segura Viudas Brut Reserva, Cava DO, “Winery of the Year 2007” by Wine & Spirits magazine, with a penchant for releasing some of Europe’s finest artisan sparkling wines;
- Castro Martin Albarino, Rias-Baixas DO. The Castro Martin Albarino 2007 received 89 Robert Parker Points;
- Pago del Vicario Rose, Petit Verdot, Castilla La Mancha which was awarded for four years as Best Spanish Rose by the REPSOL Guide Pago Del Vicario;
- Luberri, Rioja DOC. La Rioja is arguably the best wine region in Spain. The Biga Crianza 2005 received 86 Robert Parker Points;
- San Roman 2007, Tempranillo, Bodegas Maurodos that received 92 points from the Wine Spectator.
