Chinese New Year Fine Dining at Capella Singapore’s Cassia
Usher in the New Year with the joy of Spring time with Cassia’s dragon inspired festive menus.
Singapore, 10 January, 2012 – Capella Singapore’s fine-dining Chinese restaurant Cassia is welcoming the Year of the Water Dragon with three unique menus as well as a festive ala carte menu and dim sum menu.
To mark the year of the Dragon, the choice ingredient of the season is the lobster which Cassia’s Executive Chinese Chef Lee Hiu Ngai has masterfully incorporated into his signature dishes. Chef Lee explains the ingredient of choice, “The Chinese word for lobster comprises of the characters “龙” which means dragon and “虾” for prawn. What more appropriate ingredient to reflect the spirit of this dragon year!”
This Chinese New Year, Cassia presents an array of lobster inspired dishes in its festive menu. Such dishes include the Steamed Lobster Dumpling in Superior Broth which is shaped like a goldfish representing the Chinese proverb which speaks of prosperity year after year. Guests may also choose to include a round of lobster in Cassia’s Signature Lou Hei Tossed Salad, or choose to spoil themselves with Sautéed Lobster with Butter and Lemon Sauce instead of the usual sautéed prawn alternative.
Guests can also choose from three traditional set menus, the Prosperity Spring Menu priced at S$98++ per person, the Wealthy Spring Menu at S$118++ per person and the Fortune Spring Menu at S$138++ per person.
The Prosperity Spring Menu starts off with the Traditional Prosperity Lou Hei Tossed Salad with Salmon and Tuna. This set menu option highlights the double-boiled duo of scallops and fish maw, with bamboo pith in a hearty thick chicken broth, Sautéed Prawns with Butter and Lemon Sauce and is completed by Cassia’s Signature Trilogy Dessert.
The Wealthy Spring Menu features dishes such as the Double-boiled Guinea Fowl Soup and Tibetan Cordyceps, Fish Maw with Abalone and Sautéed Scallops with Pine Nuts, Preserved Vegetables, Deep-fried Red Garoupa coated with Salted Egg Yolk, finishing off with Double-boiled Bird’s Nest with Fresh Milk and Chinese Petit Four.
For those who prefer a more decadent option may choose the Fortune Spring Menu which includes a host of indulgent dishes which includes the Braised Bird’s Nest Soup with Shredded Snow Fungus and Bamboo Pith, Stewed 5 Heads Abalone with Homemade Tofu, Black Truffle, and Dried Oyster and a Double-boiled Young Apple with Hasma infused with Kumquat.
