Dim Sum Luxury at Cassia at Capella Singapore

Capella Singapore invites One-Michelin-Star Chef Mak Kwai Pui to showcase his celebrated dim sum culinary art

Singapore (10 September, 2012) – Celebrate the historical and intricate culinary arts of traditional Chinese cuisine at Cassia. This October, Cassia at Capella Singapore takes fine Chinese dining to another level, by bringing in Michelin-Starred Chef Mak Kwai Pui, from the famous Tim Ho Wan Dim Sum restaurant in Hong Kong.

Helming the kitchen alongside fellow Hong Kong veteran chef Lee Hiu Ngai, Chinese Executive Chef at Cassia, Chef Mak will be cooking for eight public dining events at Cassia, from 11 to 14 October 2012.

With over 30 years of dim sum making experience, Chef Mak was formerly the head dim sum chef at the Four Seasons Hotel in Hong Kong where he played an instrumental role in helping their Chinese restaurant Lung King Hin achieve its Three-Michelin-Star rating.

One of his most notable accomplishments was when his newly opened Tim Ho Wan Dim Sum restaurant in Hong Kong earned its first Michelin Star within the same year of its opening, earning him a mention as one of the top 25 most influential people in Asia in 2009 by CNN. His legendary restaurant is now one of the most iconic and sought-after dim sum spots in Hong Kong.

Chef Mak’s coming to Singapore marks an excellent opportunity for local epicures to savour the traditional flavours of Hong Kong Dim Sum with Chef Mak’s world famous Baked Bun with Barbecued Pork, a sugar-glaze crusted pastry filled with juicy roasted pork in a secret recipe sauce; as well as other signature items from Tim Ho Wan Dim Sum Specialist such as the Steamed Shrimp Dumpling with Bamboo Shoot, Steamed Beef Ball with Bamboo Fungus, Steamed Pork Dumpling with Shrimp & Dried Scallop.

Complementing Cassia’s exclusive surroundings, Chef Mak’s menu also includes luxurious specialties, including the Deep-fried Shrimp Dumpling with Foie Gras Sauce, Steamed Abalone Rice Dumpling, Black Truffle Mushroom Dumpling and Lobster Wrapped in Noodles Roll.
From 11 to 14 October 2012, Chef Mak, together with Chef Lee, will be presenting three exclusively crafted menus for lunch, dinner and weekend brunch.

Designed by the famed Andre Fu, Cassia offers its guests an intimate setting with its 1880s façade fitted with warm modern and sophisticated furnishings, providing the ideal location for business lunches, romantic nights out or even an afternoon of leisure with friends.

Cassia, takes inspiration from the age-old spice routes in Southern and Western China and the seas around Singapore. Classics are prepared with full respect towards tradition, where the freshest local ingredients are used to create a feast for the senses. Recipes are based upon traditional, regional cooking and blended with haute Cantonese technique.
