New Appointment: Executive Chef David Nicolas Senia

Singapore, 31 January 2013 – Capella Singapore is pleased to announce the appointment in its culinary department, Executive Chef David Nicolas Senia who takes over from Executive Chef Jakob Esko. Chef Senia will further augment Capella Singapore’s award-winning culinary team by bringing experience from top restaurants from around the world.

Chef Senia shares on his new chapter at Capella Singapore, “The culinary scene in Singapore is interesting because unlike most countries, there are no seasons in Singapore. This means that there are fewer changes to ingredients and dishes which present an interesting challenge to keep guests interested. I love learning from my guests and I am excited to uncover the flavours that appeal to the local palate.”

Chef David Senia began his illustrious career in 1988 with culinary stints at some of the best hotels and restaurants in France including Grand Hotel St. Cyr Les Lecques, the Michelin Starred Chateaux Eza, before moving up to become Chef de Partie at Two Michelin Starred restaurants such as L’Oasis in La Napoule and Chantecler in Hotel Negresco Nice. Chef Senia then moved on into Asia where he spent six years as Chef De Cuisine at the highly acclaimed restaurant La Baie in Ritz-Carlton Osaka. Following that, he went on to facilitate the opening and consulted for a number of high end French restaurants in Tokyo, Japan before taking up the position as Executive Chef of Château de Bagnols, one of the finest five-star deluxe château hotel in France, regarded by many as the finest vineyard chateau hotel in the world.

During his years of experience, Chef Senia has elevated the craft of culinary excellence into an art form with contemporary and artistic presentations of food. He believes in drawing inspiration from new experiences with the local flavours and ingredients and blending it with the various techniques acquired from his stints around the world.

Chef Senia has participated in numerous events such as the World Gourmet Summit in 2002 where he received the Awards of Excellence. During his time in Japan, Chef Senia also taught in the Culinary School at Tsuji.

With Chef Senia helming the kitchen, guests at Capella Singapore can expect a new and exciting fusion of flavours and themed events to tease their senses.
