SINGAPORE – 2 April, 2013 – Staying true to the commitment for gourmet excellence, The Knolls at Capella Singapore presents a brand new dining experience featuring a selection of authentically Mediterranean dishes with an emphasis on rich, wholesome selections that offers a rustic blend of authentic Mediterranean flavours.
Reminiscent of the classic bistros and cafes along the Mediterranean regions of France, Spain and Italy, coupled by its advantageous location by Capella Singapore’s cascading swimming pools, overlooking the South China Sea, the menu at The Knolls features a delectable array of fresh seafood and salads as well as vast selection of succulent meats seasoned with the finest herbs and spices.
Helmed by Capella Singapore’s Executive Chef, David Nicolas Senia, The Knolls menu is refreshed to include signatures specially crafted by Chef Senia. To start off the meal, the menu features a variety of Tapas to share. Highlights include the Tomato Tartar, a refreshing tomato confit cooked in the traditional French style from Provence, served with potato, almonds and Espelette pepper; the Croquetas de Jamon, which are the classic Iberian Ham croquettes and the Foie Gras Land and Sea, tenderly grilled to perfection, served with caramelised mango, king prawn in a citrus glaze.
Signature main dishes include the Ravioli, filled with a luxurious chicken and lobster stuffing, the Seabass, served with creamy Arborio rice truffle risotto, topped with wild mushroom fricassee as well as the succulent slow cooked Wagyu Beef Cheek.
For dessert, guests can look forward to the Tocino de Cielo, a distinctively Spanish custard, served with a refreshing mandarin sorbet; as well as a familiar favourite, the Churros, a deep-fried Spanish-style doughnuts accompanied by homemade chocolate sauce, lemon cream and whipped cream.

Chef Senia brings to Capella Singapore many years of experience from some of the finest Two Michelin Starred restaurants in the world such as, L’Oasis in La Napoule, Chantecler in Hotel Negresco Nice, La Baie in Ritz-Carlton Osaka, and Château de Bagnols in Lyon.
The culinary prowess in Asia is constantly growing and expectations from well-travelled and educated individuals are constantly changing and increasing. The lack of seasons in Singapore means that there are fewer changes to ingredients and dishes which in turn present an interesting challenge to keep guests interested. I love learning from my guests and I am excited to uncover the flavours that appeal to the local palate.”
