Cassia Restaurant at Capella Presents An Exquisite Tea-Inspired Menu

Singapore, 20 September 2011 – Tea has long been a popular drink of choice for many since ancient times due to its pleasing taste and increasingly recognised medicinal values.  Paying tribute to this classic brew, Capella Singapore’s Chinese restaurant, Cassia, has innovatively incorporated the essence of this humble drink into an inspired five course tea-infused menu.

Cassia’s tea-infused menu harmonises the characteristics of each different tea with its respective course. Commencing the meal with the Combination of Suckling Pig with Shrimp Paste and Dragon Well Tea, Smoked Duck Breast with Fragrant Tea and Radish Puff with Oolong Tea starter dish, the menu also includes the restaurant’s signature dish, Poached Lobster with Wild Mushrooms, Iron Goddess Tea and Superior Stock. The full-bodied and flavoursome blend of Iron Goddess Teaand Superior Stock is served in a teapot and poured on-the-spot to the dish upon the second course, yielding a fresh and satisfying savour.

The meal goes on to delight guests with authentic offerings such as theSteamed/Baked Chilean Sea Bass with Tea Leaf and Combination of Marinated Soya Chicken with Supreme Tea and Fragrant White Rice. In addition, guests will also be delighted with the refreshing Double-boiled Young Apple with Jasmine Tea, Hasma and Snow Fungus dessert that helps to lower blood cholesterol. The meticulously conceptualised menu concludes with a Rose Tea with Honey which leaves diners a sweet and light after-meal refreshment.

Flavours and health benefits are abundant with this new tea-infused menu at Cassia. The selection of teas that form part of the menu includes a fine assembly of handpicked Jasmine tea, Oolong tea, Iron Goddess tea, Chrysanthemum tea, Supreme tea and Rose tea. After a tedious two-months of research work, the team at Cassia has singled out Jasmine tea for its myriad of health-enhancing antioxidants (catechins and antigens) which help in the reduction of inflammatory conditions; Oolong tea for its high content of antioxidants and slimming benefits; Chrysanthemum tea for its benefits as a natural coolant as well as its high Vitamin A content which addresses skin ailments, boosts immunity and keeps advancing blindness risks and age-related eye issues at bay; and finally, Rose tea was chosen to conclude the meal due to its ability to help build a strong immune system and strengthen the digestive system.

Artfully prepared by Chef Lee Hyun Ngai and his team, this tea-inspired menu pampers diners and tea connoisseurs with the delightful goodness of tea while paying tribute to Cassia’s dedication to traditional preparation methods of Cantonese dishes.
