World Gourmet Summit at Capella Singapore

SINGAPORE, 1 April 2013 – One of the headlining acts at this year’s World Gourmet Summit 2013 is world-renowned pastry chef, Paco Torreblanca and his son, Jacob Torreblanca who is also a pastry prodigy at Capella Singapore. 

 Paco and Jacob Torreblanca will be helming a series of events at The Knolls at Capella Singapore including a set dinner menu from 18 to 20 April 2013 and a chocolate high tea from 20 to 21 April 2013, culminating in Sunday Brunch which will showcase their creations amidst a range of Capella Singapore’s signature Mediterranean dishes on 21 April 2013.

 Guests going to The Knolls for dinner from 18 to 20 April 2013 will experience firsthand Paco and Jacob Torreblanca’s pastry genius with typically savoury ingredients infused with chocolate sauce.  Guests will have their senses tickled with dishes that feature surprising flavours such as venaisson terrine pears and chocolate chutney, warm scallop chocolate crust and daikon, roasted pigeon breast bitter chocolate sauce, hazelnut cauliflower puree and finally, culminating with huevo de oro de bigas luna, bigas luna golden egg and 4 mignardises.

 The sweet tooths among us will appreciate a chocolate high tea on 20 and 21 April 2013, featuring a symphony of chocolate flavours, textures and colours. Guests will enjoy eight delightful servings of innovative pastry creations such as vanilla cream sphere and crocant, 70% chocolate tart with crocant, saffron and chocolate, caramelized passion fruit tart, to name a delectable few.   

 In addition to the plethora of gourmet delights, Sunday Brunch at The Knolls featuring Paco and Jacob Torreblanca will include a decadent chocolate buffet spread with skilfully crafted confections, a true feast for all senses.

 Born in Alicante, Spain in 1951, Chef Paco Torreblanca is hailed as one of the forefathers of modern pastry and is highly acclaimed for his innovative and creative flavour combinations.  He enjoys researching unique and novel ways of using cocoa, including blending them with spices from all over the world.  He has also undertaken studies on the use of extra virgin olive oil to replace cocoa butter, creating chocolates with extraordinary smoothness.

 Chef Torreblanca has been the recipient of numerous accolades, including the Great Prize of the Gastronomic Academy in 2006 and Best Pastry in Restaurant dessert of Spain in 2004. He is the principal of the International School of Pastry Arts and a member of the International Association Relais Dessert

 Beyond his experimentations in the kitchen, he is also a famed author who has written three cook books, La cucina dolce (2002), Paco Torreblanca (2006) and Paco Torreblanca Colección Volume Three Sugarworks and Technique & Recipes (2009) that feature a wide repertoire of step-by-step recipes and mouth-watering photographs.

 Chef Jacob Torreblanca’s professional career began at a young age when his father, Chef Paco Torreblanca, sent him to an old friend’s house in Paris. Chef Jean Millet, a pastry maker, forged the professional destiny of Chef Jacob Torreblanca through tenacity, knowledge and dedication.

 

Paco and Jacob Torreblanca have also recently set up their own school, the Paco Torreblanca School in the Mediterranean State of Alicante, Spain.  Courses are conducted by Paco and Jacob themselves, together with a talented group of worldwide-accomplished and respected professionals. The Paco Torreblanca School offers pastry courses of high excellence standards, giving students certification in the fundamental requirements of Pastry Arts in just six months.
