Capella Singapore serves up some of the finest truffles in the world

SINGAPORE (30 July 2013) – This August marks the height of the black winter truffles season in Australia. From now till 31 August 2013, diners at Capella Singapore’s restaurants – The Knolls and Cassia will be able to enjoy the Tuber Melanosporum Truffle, the finest grade of black truffles, with their meal. To further complement this luxurious ingredient, a special truffle inspired tasting menu has been created for diners at The Knolls allowing guests to savour the unique flavours of the black winter truffle.

The Knolls Truffle Tasting Menu features carefully selected ingredients by Executive Chef, David Senia, to complement the strong intense aroma and flavour of the black winter truffle. The menu features Truffle Scrambled Eggs, cooked to perfection with shavings of black truffles, served together with a toasted brioche, Vichyssoise, which is a potato and leek soup served with shavings of Iberico ham and the black winter truffle. The creamy texture of the soup brings out every scent of the truffle shavings, balanced in perfect tandem with the savoury Iberico ham.

The Truffle Tasting menu ends off with the Truffle Risotto With Beef Cheek Ragout. The signature risotto from The Knolls restaurant is enhanced with the addition of a slow cooked beef cheek ragout which harmoniously complements the smooth creamy texture of the risotto. Black winter truffle shavings are added to create a sensational burst of flavours to the palate.

Often synonymous with European cooking and international haute cuisine, truffles are a prized commodity. Australian truffles have recently been acknowledged as producing the world’s highest yield per hectare of truffle farm in the world and are now highly in demand in Europe1. West Australian truffle growers, for example, have also just registered a record yield for this year, expecting a bumper crop of around 4,000 to 5,000 kilograms, surpassing last year’s harvest of 3,000 kilograms2.

The introduction of Australian black truffles into the global marketplace has been compared to the resurgence of Australian wines in the 1980s and based on the high quality of produce, it may be likely that demand for the truffles will start to outpace those grown in Europe3.

Furthermore, because Australia’s winter seasons are inverse to Europe’s, truffles are now available on restaurant tables worldwide during the European summer.

Each truffle is unique, the complexity of its flavours and fragrances vary based on where they are grown and their surrounding environments. With its vast natural farming terrain, untainted by chemicals and pollution, Australia provides a natural thriving ecology for truffles and a fast growing producer of quality truffles4. Australian truffles are grown by incorporating the best of European techniques and Australian agricultural technology.

The three-course truffle tasting menu at The Knolls is available from now until 31 August 2013 and is priced at S$130++ per person. Truffle shavings, priced at S$8++ per gram, are also available for guests to embellish their meals.
