SINGAPORE – August, 2014 – Offering diners the best of fine dining with the life and heart of a vibrant bistro setting, The Knolls at Capella Singapore presents a brand new dining experience with a “bistronomy” themed menu featuring a selection of Mediterranean inspired dishes with an emphasis on the finesse that comes with the fine-dining experience and rich wholesome flavours, set in the comfort of The Knolls’ poolside setting.
In keeping with the commitment to authentic Mediterranean cuisine, the new “bistronomy” menu at The Knolls features a delectable array of fresh seafood and salads as well as hearty selection of succulent meats seasoned with the finest herbs and spices.
Signature highlights to look forward to at The Knolls now include a refreshing Homemade Chicken Charcuterie served with a mesclun salad with whole grain mustard cream, and a Tuna and Smoked Anchovies platter with potatoes, arugula salad and bistro vinaigrette for starters.
The main course features a selection of delectable meats such as a Roasted Monkfish with white bean stew, tomato confit, chorizo and basil, as well as a hearty Sautéed Kurobuta Pork Chop platter for two among many others.
Ending on a sweet note, guests can look out for a traditional Italian Cassata made with a fragrant pistachio sponge, raspberry sorbet, candied fruit as well as the classic Tiramisu.
Set menus are also available at The Knolls for diners who do not want the hassle of choice.
The masterful collaboration of fine dining gastronomy and classic bistro concepts is a testament of the culinary experience from Executive Chef David Senia as well as Sous Chef, Julienne Rocca, currently the only female chef in Singapore to helm a restaurant.
Chef David Senia who brings many years of experience from some of the finest Two Michelin Starred restaurants in the world such as, L’Oasis in La Napoule, Chantecler in Hotel Negresco Nice, La Baie in Ritz-Carlton Osaka, and Château de Bagnols in Lyon.
With an illustrious career in some of the top restaurants in France, Chef Julienne Rocca’s notable career highlights include starting as a Commis de cuisine in the Three-Michelin Starred Le Jardin Des Sens in Montpellier France and later being trained at the Michelin Starred Auberge la Fenière by the iconic Chef, Reine Sammut, who is known for her proficiency in Mediterranean cuisine. Chef Julienne worked her way up from Chef de Partie to be promoted to head the culinary team at la Fenière’s sister bistro, le Passage in Provence, France as their Sous Chef.
