Sumptuous Cantonese delicacies on Island Paradise abound this festive spring season

Singapore, 13 December 2016 – Capella Singapore welcomes the Year of the Rooster with finesse, featuring an exquisite selection of ultra-luxurious auspicious menus in Cassia, its Cantonese fine-dining restaurant. Guests can also choose to take a break from the city with the award-winning resort’s rejuvenating three-night retreat package over this celebratory period.

Traditional Lou Hei with an elegant touch


Cassia’s Prosperity Lou Hei

A local tradition for the Lunar New Year, Cassia’s Prosperity Lou Hei (百花齐放捞起), is the classic favourite for the fine-dining Cantonese restaurant. With a name symbolising a prosperous new year ahead, each ingredient is meticulously handpicked by Cassia’s Executive Chef Lee Hiu Ngai. The Lou Hei is masterfully designed by Chef Lee and comprises a generous serving of fresh greens, salmon and homemade passion fruit sauce for a citrusy kick. At S$68++ per serving, the dish is designed to be shared between two and four persons.

Guests dining in pairs can also opt for Cassia’s Signature Lou Hei (凯嘉品味捞起), served with fresh seafood including lobster and sea urchin. Priced at S$38++ per person, this celebratory platter is for a minimum of two diners.

Abalone, the original ingredient in this traditional tossed salad dish, is also available upon request. Cassia’s Lou Hei platters will be available in the restaurant from 14 January to 11 February 2017.

Family reunion meals in style

Diners who wish to experience an unforgettable family reunion can look to Cassia as it offers two delectable set menus specially crafted to usher in the festive spring season. Available exclusively only on the eve of Chinese New Year on 27 January 2017, each set menu includes a serving of Cassia’s Prosperity Lou Hei to perfect the dining experience.

The Prosperity Reunion Menu (齐欢庆团年饭) is priced at S$128++ per person and denotes a joyous celebration with loved ones. Guests will be pampered with an assortment of Cassia’s favourites such as the Signature Double-boiled Thick Chicken Broth with Fish Maw, Duo of Scallops and Flower Mushroom, the Stewed Chicken with Whole Abalone and Fresh Beancurd, as well as the Baked Chilean Sea Bass with Homemade Special Chilli Sauce. The flavoursome broth of the restaurant’s most popular soup suggests the unbreakable bonds among family and friends, an aspect deeply rooted in the Chinese culture.

Diners can also choose to luxuriate their dining experience with the Fortune Reunion Menu (合家欢团年饭) priced at S$168++ per person. Signifying the happy family reunion on the most important occasion for the Lunar calendar, the menu features beautifully-crafted seafood delicacies including the Bird’s Nest with Sea Urchin and Superior Sauce as well as the Braised Three-heads Australian Abalone with Flower Mushroom and Seasonal Greens.

 

Luxurious Chinese New Year Set Menus

Adding to the auspicious season, guests can choose from four traditional Chinese New Year set menus featuring Cassia’s finest authentic Cantonese offerings.

Cassia’s Spring Menu (春回大地), priced at S$79++ per person, reflects the coming of the spring season and consists of a delectable combination of Baked Spare Ribs with Golden Garlic, Wok-fried Min Xin with Eggs and Vegetables topped with Chicken Floss, as well as a refreshing Homemade Water Chestnut Cream with Osmanthus and Glutinous Rice Dumpling.

The Abundant Blessing Menu (吉星报喜), priced at S$139++ per person, is created to welcome good luck and fortune for the Year of Rooster. The menu features the flavoursome Five-Spice Roasted Australian Yorkshire Pork Belly, the nutritious Double-boiled Chicken Soup with Abalone, Dried Scallops and Sea Whelk, as well as the juicy Wok-fried Japanese M9 Wagyu Beef with Young Ginger and Pineapple.

The Double Happiness Menu (如意吉祥), is priced at S$169++ per person and translates to overflowing luck and success for the coming year. The splendid menu includes the Braised Bird’s Nest with Sea Urchin Sauce, the Wok-fried Lobster Medallion with Goose Liver, Spring Onion and Ginger, as well as the hearty Handmade Noodles with Black Truffle and Minced Japanese M9 Wagyu Beef.

The Deluxe Fortune Menu (大展鸿图), priced at S$199++ per person, translates to a bright outlook for the year ahead. The ultimate menu features authentic flavours from premium ingredients in dishes including the Braised Three-heads Australian Abalone with Sea Cucumber, Mushroom, Bamboo Pith and Dried Oyster, the premium Wok-fried Japanese M9 Wagyu Beef with Black Pepper Sauce, the flavourful Stewed Handmade Noodles with Lobster in Superior Stock, before ending the meal on a sweet note with the Sweetened Bird's Nest with Six Treasures Soup.

Cassia’s Chinese New Year set menus will be available from 28 January to 11 February 2017. Helming Cassia, Chef Lee has a strong 30-year experience under his belt, after working with several celebrated Chinese restaurants from Beijing and Hong Kong. He is also known to create sensory feasts of traditional regional cuisine prepared from freshest produce complemented by haute Cantonese cooking techniques.
