Singapore, 20 December 2017 – Ring in an auspicious Lunar New Year at Capella Singapore as the resort presents an enticing line-up of culinary delights. Toss to a Year of Prosperity, Success and Harmony 

Mark the start of the Year of the Dog in style with a colourful plate of Yu Sheng (commonly known as Lou Hei) designed by the Executive Chef of Cassia, Chef Lee Hiu Ngai. A local traditional must-have item served during the Spring Festival, Chef Lee's renditions of this celebratory platter will set to delight each palate with its unique combinations and refreshing flavours. 

Prosperity Lou Hei 锦绣前程捞起 – Toss to a year of success with this classic take of the ubiquitous platter, consisting of a vibrant mix of fresh seasonal greens and significant condiments such as crushed peanuts (金银满屋) and golden crackers (满地黄金) which symbolise an abundance of wealth. Ring in a year of triumph with salmon sashimi (年年有余) and sweeten the year ahead with Cassia’s homemade plum sauce (甜甜蜜蜜). The Prosperity Lou Hei is available from 1 February to 2 March 2018 at $68++ per platter (for 2 to 4 persons). 

Cassia Signature Lou Hei凯嘉品味捞起 – Back by popular demand, Cassia will be serving its luxurious Lou Hei curation for Chinese New Year 2018. Masterfully created by Chef Lee, this propitious salad features a medley of premium ingredients with symbolic meanings. The Lobster signifies happiness and laughter throughout the year (哈哈大笑); the North Pole Clam refers to an abundance of opportunities in the coming year (狗年行大运) and the Salmon represents success (年年有余). Before the toss, add Cassia’s homemade Hawthorn Sauce and wish for all things harmony in the year to come. The Cassia Signature Lou Hei is available from 1 February to 2 March 2018 at $38++ per person with minimum 2 persons required.

On the eve of Lunar New Year (15 February 2018), diners can look forward to a hearty feast with Cassia’s curated set dinner menus, the Prosperity Reunion Set and Fortune Reunion Set

Prosperity Reunion Set齐欢庆团圆, priced at $139++ per person, symbolises a joyous celebration with loved ones during this meaningful occasion. Kick start the reunion meal with the time-honoured tradition of tossing the Prosperity Yu Sheng platter for good luck, good fortune and good healthThereafter, tuck into highlights such as the restaurant’s signature Double-boiled Thick Chicken Broth with Fish Maw, Duo of Scallops and Flower Mushroom, the flavoursome Stewed Whole Abalone, Sea Cucumber and Seasonal Greens, as well as Fragrant Rice with Preserved Sausages wrapped in Lotus Leaf. 

Fortune Reunion Set合家聚满, priced at $169++ per person, is thoughtfully created by Chef Lee to bring extended family members together for a heartwarming celebration. Savour Cassia’s signatures with unique twists. Highlights include the Prosperity Yu Sheng platter, Braised Bird’s Nest with Caviar in Superior Brown Sauce, Braised 3 Heads Australian Abalone with Sea Cucumber, Flower Mushroom and Seasonal Greens, and Steamed Lobster with Black Garlic in Light Soya Sauce. End the scrumptious feast on a perfect note with Cassia’s dessert highlight, the Chilled Coconut Cream with Pearls and Sago topped with Ice Cream

Lunar New Year Set Menus

 Braised Four Treasure Duck with Sea Cucumber, Mushrooms, Bamboo Pith and Bamboo Shoot

From 16 February to 2 March 2018, Cassia will be celebrating the 15 days of the happiness with its four exquisite Lunar New Year set menus. 

Spring Menu春回大地, priced at $88++ per person, denotes the arrival of the spring season, a symbol of fresh beginnings and a smooth year ahead. This exclusive lunch-only menu will start off with Cassia’s signature Combination Platter (Five Spice Roasted Australian Yorkshire Pork Belly, Steamed Crystal Dumpling with Truffle and Vegetables and Deep-fried Lobster Dumpling with Mayonnaise Sauce), and include highlights such as the nourishing Double-boiled Thick Chicken Broth with Fish Maw, Duo of Scallops and Flower Mushroom, and a special Braised Four Treasure Duck with Sea Cucumber, Mushrooms, Bamboo Pith and Bamboo Shoot. 

Abundant Blessings Set吉星报喜, priced at $139++ per person, is crafted to ring in good luck and more happy celebrations in the Year of the Dog. This menu features Cassia’s signature Combination Platter, the nutritious Double-boiled Chicken Soup with Abalone, Dried Scallop and Sea Whelk, guests’ all-time favourite Wok-fried Australian M9 Wagyu Beef with Black Pepper Sauce. Complete the celebratory indulgence with a refreshing Chilled Strawberry Cream with Pearls, topped with Sorbet. 

Double Happiness Set如意吉祥, priced at $169++ per person, depicts a smooth year ahead filled with happiness and good luck. This lavish menu showcases the tantalising Cassia’s Combination Platter (Crispy Suckling Pig with Minced Shrimp, Roasted Pan-fried Goose Liver with Roasted Duck and Five Spice Roasted Australian Yorkshire Pork Belly). Added to the menu are other highlights such as the luxurious Braised Imperial Bird’s Nest in Supreme Broth, Stewed Fish Maw, Sea Cucumber and Dried Oyster with Oyster Sauce, and the delicious Homemade Almond Cream with Hasma and Egg White as the dessert. 

Deluxe Fortune Set大展鸿图, priced at $199++ per person, is the ultra-luxurious menu to welcome a successful and healthy lunar year. Featuring an impressive collection of Chef Lee’s specialties, diners can relish in a comforting meal with the Double-boiled Thick Chicken Broth with Fish Maw, Duo of Scallops and Flower Mushroom, Braised 3 Heads Australian Abalone with Sea Cucumber, Dried Oyster, Bamboo Pith and Mushroom, the succulent Wok-fried Wagyu Beef with Black Pepper Sauce, Steamed Inaniwa Udon with Lobster in Superior Stock, and a specially crafted Trilogy Dessert to top off the meal. 

Diners can up the ante of their celebration with the classic Prosperity Yu Sheng platter (Lou Hei) at a special price of $38++ per serving (serves up to 2 persons). 

Lunar New Year Set Menus are available at Cassia in all 15 days of Chinese New Year from 16 February to 2 March 2018. Lunch operational hours are from 12:00pm to 2:00pm and Dinner starts from 6:30pm to 10:00pm.  

 

Celebratory Delights

For a more elaborate celebration, diners can select additional delights from Cassia’s seasonal a la carte menu featuring traditional Lunar New Year dishes. Highlights include the Wok-fried Prawns stuffed with Minced Shrimp and Crispy Garlic in Bi Fong Tong Style 避风塘虾中虾 ($16++ per person) that signifies a year full of laughter; the Braised Pork Knuckle with Vegetables in Brown sauce 碧绿红烧猪手尖 ($22++ per person) or the Braised Four Treasure Duck with Sea Cucumber, Mushrooms, Bamboo Pith and Bamboo Shoot 发财四宝香酥鸭 ($20++ per person) which represents an abundant year of wealth and fortune.
