 Capella Singapore partners with olive oil specialist and one Michelin Star Chef Carles Tejedor

Singapore, 9 July 2012 – As the international dining scene becomes more competitive, so to has the culinary scene with a myriad of new culinary innovations and inventions. This August, Capella Singapore seeks to contribute to the local gastronomic landscape by bringing in Spanish Celebrity Chef and renowned olive oil expert, Chef Carles Tejedor who is currently Chef de cuisine at Via Veneto, a one Michelin star restaurant in Barcelona.

Helming the kitchen for six public dining events at The Knolls at Capella Singapore on 9 to 12 August 2012, Chef Carles will be bringing to guests a truly unique dining experience, creating an epicurean olive oil inspired set lunch and dinner menus using the award-winning Castillo De Canena Olive Oil, notably the best Spanish olive oil.

Going beyond the usual creative presentation of food, Chef Carles specialises in breakthrough contemporary cooking techniques and taking this fundamental Mediterranean ingredient – olive oil – to create a feast of different textures and flavours, a true treat for the palette.

Notably, Chef Carles was invited by Harvard University to present his modern avant-garde techniques which showcase the different textures of Spain’s olive oil.

He recently worked with a veteran olive oil brand to develop a unique electronic application “OilLab”, introducing people to the world of olive oil and its properties, educating users on how to experience it with the five-senses.

He will be bringing these ground-breaking culinary ideas and cooking techniques with him to Capella Singapore with the goal of educating not only the culinary team at Capella Singapore but also to educate the Singapore public on the importance of choosing the highest quality produce for their dishes.

Chef Carles will be working together with Capella’s own Executive Chef, Jakob Esko, with his own pedigree background. Chef Jakob began his foray into the culinary scene at Michelin –Star Restaurant ‘Sihlhalde’ in Zurich, Switzerland. Soon after he was appointed as Chef de Cuisine at one of the best restaurants in Sweden, the legendary Ulriksdals Wärdshus; which incidentally owns the world’s finest wine collection according to the Guinness Book of World records in 2001.
Since then, Chef Jakob has built up an impressive international portfolio by working in some of the best Michelin-Star restaurants in England, France, Switzerland and Spain.

Starting the series off will be a three-course set lunch menu on 9 and 10 August 2012 featuring a delectable Oyster in Escabeche with Vermouth and a five-course set dinner menu on 9 to 11 August. Dinner menu highlights include Textures of Asparagus and Pigeon Ala Royal 2012 as well as a refreshing Lemon Tea Pre-dessert which was voted best world restaurant dessert 2007.
Chef Carles concludes his stint at Capella Singapore with the Mediterranean Sunday Brunch where he will be showcasing two of his signature dishes, an inspired Liquid Ravioli with Root Vegetables and a Melon Soup with Cava.

Guests will able to enjoy these classic Catalonian dishes together with other signature brunch items from The Knolls’ menu which include, sea-bass in a salt-crust, crispy Spanish suckling pig and entrecote with foie gras.

9 and 10 July 2012, lunch is priced at S$68++ per person for lunch only.
9, 10 and 11 July 2012, dinner is priced at S$88++ per person for dinner only.
12 July 2012, Sunday Brunch prices are from S$148++ per person, inclusive of a free flow of boutique wines and S$168++ per person, inclusive of a free flow of premium champagne and boutique wines.
