Rare treats at Capella Singapore

Singapore, 9 March 2012 – Capella Singapore redefines dining at both The Knolls and Cassia, presenting guests with a chance to savour rare delicacies. Starting on Thursday 29 March 2012, Capella Singapore presents Iberian Night at The Knolls, with a special three-course set menu featuring premium cuts of Iberian pork. Over at Cassia, guests are invited to delight in an epicurean treat with the all new Boston Lobster set menu. Cassia presents guests with a unique menu masterfully crafted around the Boston Lobster.

Iberian Night at The Knolls

Priced at S$85++ for dinner only or S$130++ to include a free flow of premium Spanish wines and beer, the Iberian Night set menu features a choice of select Iberian pork dishes for the main course. The three-course set menu comes with a light starter of either a soup or salad and a delectable dessert. Iberian Night will take place every Thursday from 7pm at The Knolls restaurant.

Known to be one of the most succulent, tender and well flavoured pork, the Black Iberian Pigs that hail from Spain create some of the most sought after meats in the world. Iberian Night at The Knolls features five delectable main course options fresh off the barbecue, three of which include prime cuts of Iberian Pork.

Guests are invited to savour as The Knolls’ very own Spanish chef Cristia Nou Picart brings this Spanish delicacy to life. The choice of main course includes a generous portion of Iberian Pork Loin, slow roasted Iberian pork shoulder or Iberian barbecued pork ribs. For guest who would prefer a slightly less exotic dinner, the choice of main course also offers an option for a whole grilled sea bream fish or a succulent Australian grain-fed rib-eye steak. All main courses are served with a delicious homemade barbeque sauce, Spanish barbecue salad, Mediterranean vegetables and baked potato “salsa brava”.

Iberian Night at The Knolls would not be complete without allowing our very own Knolls chefs to surprise guests with a tantalising dessert specially crafted to suite the evenings’ good cheer.

The all new Boston Lobster set menu at Cassia

Cassia, Capella Singapore’s Chinese fine dining restaurant, presents an all new Boston Lobster set Menu. The Boston lobster set menu features three courses which masterfully incorporate the Boston lobster through various cooking techniques and styles.

Cassia’s four-course Boston Lobster set menu commences with a refreshingly light combination of Chilled Lobster Claw with Green mango Salad, Deep-fried Lobster Head stuffed with Claw Meat, Chilled Sliced Abalone with Spinach and Sesame Sauce that sets a distinctly tantalising tone to the start of the menu. This is soon followed by a savoury Chicken Soup with Lobster Claw, Bird’s Nest Wonton and Bamboo Pith which delights the palate and prepares it for the grand crescendo where guests are presented with a choice of main dish served with Stewed Crystal Noodles in Cassia’s signature XO Chili Sauce.

The choices for the main dish include the Wok-fried Lobster Medallion with Goose Liver and Spring Onion, Steamed Lobster Medallion with Garlic or Sautéed Lobster Medallion with Fresh Mushrooms and Black Truffle.

The Boston Lobster Set Menu concludes on a sweet note with the Double-boiled Young Apple with Hasma and Snow Fungus dessert.

This Boston Lobster set menu is available at Cassia from now till 30 April 2012 and is priced at S$68++ per person.
