Singapore, 1 September 2011 – Inspired by its seafront setting, a refreshing Mediterranean dining experience complete with a spectacular sea view is now available at The Knolls at Capella Singapore.

Following the success of its exquisite afternoon teatime offering, Capella Singapore’s Mediterranean restaurant, The Knolls, continues to hit the right notes with its new menu. Meticulously segmented into “Hearty Selections for Gentlemen” and “On the Lighter Side for Ladies”, the thoughtful menu places emphasis on rich, flavoursome selections that offers a healthy masculine choice-diet for males while the latter features a wide selection of light, low-carbohydrate salads, soups and menu items that complement the lifestyle and well-being for the ladies.

On a whole, the new Mediterranean menu fills the charming restaurant with luscious bold flavours using the freshest produce. Signature items such as the grilled marinated rack of lamb with North African spice “Ras el hanout” couscous salad with fresh mint and bell peppers and the pan-seared sea bass with black truffle risotto and baby vegetables from the ladies’ menu as well as the slow cooked beef cheek from the gentlemen’s menu, both play up on the natural flavours of quality ingredients. Mediterranean toasts and tapas such as tomato tapenade, Iberian cured ham and toast of duck rillettes with fig jam also encourage communal dining within a convivial ambience. The dessert selection is presented as colourful and playful petite options. Chef’s recommendations include the Churros, a deep-fried Spanish-style doughnuts accompanied by homemade chocolate sauce, lemon cream and whipped cream as well as the Semifredo, a frozen Italian strawberry moose with blood orange consommé and pistachio biscuit, both of which are stellar sweet offerings bound to please both adults and children alike.

The Knolls’ new a la carte menu featuring classic dishes with thoughtful twists bears testament to the chefs’ profound culinary experience and dedication to hearty and healthy dining. Hailing from Sweden and specialising in European, modern Mediterranean and Swedish cuisine, Executive Chef Jakob Esko’s experience includes stints in Michelin-star restaurants such as Ulriksdals Wärdshus in Sweden, Hotel Juana Restaurant La Terrasse Christian Morisset in France and La Tante Claire in England. Sous Chef Cristia Nou Picart’s portfolio highlights includes a four-month stint at world-renowned 3-star Michelin restaurant – El Bulli, as well as his appointment as Chef de Partie responsible for three restaurants under Mediterranean Maestro Roberto Holz in Barcelona in recognition for his culinary finesse.

The diet preferences as well as the nutritional requirements for males and females are innately different. With that in mind, Executive Chef Jakob Esko shared. “A lot of research and hard work was poured into this menu.  We wanted to create a menu that was not only authentic but also presented our guests with dining options that complemented their lifestyles and preferences.  Only the freshest and best ingredients are used to create our dishes, ensuring that every mouthful is as refreshing and as delectable as the last.

The Knolls is an unforgettable dining space which melds colonial architecture with a warm Mediterranean colour palette.  Those who would prefer to enjoy their Mediterranean meal in company of the soft sea breeze can sit at The Knolls’ alfresco dining space that overlooks Capella’s cascading swimming pools and the South China Sea.
